I’m sure you have childhood memories of waking up on a Saturday and looking up at a stack of pancakes on your plate. I assure you, this is not your basic pancake.

Japanese soufflé pancakes are traditionally light airy pancakes. Egg yolks and egg whites are separated, and the whites are beaten to make the meringue. Just like how you would make savory and sweet souffle or chiffon cakes.

At our house, Dorie happily creates dishes when she gets hit with that foodie itch to make something she sees on the internet and today woke up to a delicious morning treat.
